Shojin cuisine is vegetarian food eaten in Japanese Buddhist temples.

And I am using Japanese fermented seasonings and food in all the recipes.

Mashed Pumpkin and Prune

Today I want to share with you how to make “Mashed Pumpkin and Prune” .

It requires only four ingredients!

A simple dish that combines pumpkin mash with Shio Koji and prunes.

Shio Koji adds Umami and mild saltiness to and Pumpkin and makes it so delicious!

Fermented seasonings are indispensable for cooking as they add a nice aroma and deliciousness to my dishes.

In my Youtube video, I will also show you how to make a pumpkin skin snack.

Don’t throw these seeds away as they will be a delicious treat.

Put the cotton part in miso soup or soup.

In fact, this cotton part and seeds are sweeter than pumpkin and contains twice as much phytochemical beta-carotene.

It is effective in improving antioxidant power and immunity.

It’s a waste to throw them away.

Mashed Pumpkin and Prune

A simple dish that combines pumpkin mash with Shio Koji and prunes.

Equipment

  • Oven
  • bowl
  • spatula

Ingredients
  

  • 400 g Pumpkin
  • 60 g Dry prunes
  • 2 tbsp Vegetable oil
  • 1 teaspoon Shio Koji

Instructions
 

  • Wash the pumpkin. Remove pumpkin seeds.
  • Don't throw these seeds away as they will be adelicious treat.
    Put the cotton part in miso soup or soup.
  • Peel the pumpkin thickly, about 2mm. Thetrick is to peel it a little thicker.
  • Please save this skin as it will be a delicioussnack later.
  • Spread the cooking sheet on the oven plate.
    On a sheet of pumpkins lined up.
    Put the washed seeds on together.
  •  Bake at 210 degrees Celsius for 10 minutes.
  • Cutthe prunes while baking the pumpkin.
  • Putpumpkin in a bowl and mash it.
  • AddShio koji, oil and prunes.
  • Mix them.
