【Okara and Tofu Donuts】

 Hello everyone. My name is Yoshiki Ito; I’m an expert on Japanese fermented food. 

I will introduce Shojin cuisine.

Shojin cuisine is vegetarian food eaten in Japanese Buddhist temples.

And I am using Japanese fermented seasonings and food in all the recipes.

Today I want to share with you how to make “ Okara Tofu Donuts” .

Since it uses rice flour, it is a gluten-free and an intestinal-friendly snack.

Of course, it’s 100% plant-based.

Just mix and deep-fry the ingredients. Anyone can make it easily.

Usually, making donuts from rice flour gives them a firm or lumpy texture.

Surprisingly, when you mix okara and tofu together, you can make donuts that are crispy on the outside and fluffy on the inside.

By adding amazake, you can bring out the natural sweetness and umami without adding sugar to the dough.

Fermented seasonings are indispensable for cooking as they add a nice aroma and deliciousness to the dishes.

 I will talk about four health benefits of “Okara”. 

Okara is a byproduct of the tofu-making process.

Okara is a squeezed residue when making Tofu.

In fact, this Okara has many powers to regulate the body.

That’s why I think it’s a Japanese superfood.

Okara is the residue of soy milk squeezed from soybeans.

Here is a graph comparing the two.

In fact, okara is more nutritious than soy milk. Don’t you think it’s very interesting?

Soy isoflavones work like the female hormone “estrogen” and help women’s beauty and youthfulness.

Soy protein stimulates the satiety center and has the effect of increasing satiety and suppressing appetite.

It also has a fat-burning effect.Ingestion of soy peptides contained in soybeans increases the amount of adiponectin secreted.

In Japan, there is a phrase “okara diet,” which is widely recognized, especially by beauty-conscious people .

Adiponectin is a secretory protein that is secreted by adipocytes, and has the function for activate fat-burning.

Okara Tofu Donuts

Healthy Donuts with plenty of tofu, okara and amazake. It's a gluten-free vegan.

Equipment

  • Mix rice flower, okarapowder and baking powder together.
  • In a separate bowl,add Amazake ,Shio Koji, and Tofu and mix well.
  • Put this mixture in the bowl with the powders and mix well.
  • Then add the flour and the soy milk little bylittle. It's OK when it reachesa consistency like earlobe .
  •  Thendeep-fry the mixture in oil. Fry slowly at alow temperature of about 160 degrees Celsius.
  • When it turns done golden brown, take it out to thetray.
  •  If you like,toss some brown sugar or coconutsugar into the bowl. Mix whilethe donuts are still warm.
  • It's done. Serve immediately, while still hot.

Ingredients
  

  • 150 g Silken Tofu
  • 100 g Amazake
  • 80 g Rice flower
  • 35 g Okara powder
  • 10~15 ml Soy milk
  • 10 g Shio Koji
  • 1.5 tbsp Baking powder
